NADP+-Dependent Sorbitol Dehydrogenase Found in Apple Leaves1

An NADP+-dependent sorbitol dehydrogenase that catalyzes sorbitol and glucose was found in apple leaves. The partially purified enzyme had optimum activity at pH 9.6 and a Km value of 128 mM for sorbitol. Among the polyols studied, this enzyme showed the most activity for sorbitol.
