Membrane Fluidity in Senescing Apples: Effects of Temperature and Calcium1,2,3

Fluorescence polarization values of 1,6-diphenyl-2,3,5-hexatriene (DPH) in microsomal membranes from cold stored (2°C) untreated and calcium-treated apples were lower than those obtained in membranes from apples stored at room temperature. Calcium treatment of apples appeared to reduce the increase in polarization of DPH in membranes which occurred after storing apples at room temperature.
