Part of the Lysyl Residues in Wheat
-Amylase is Methylated as N-
-Trimethyl Lysine

Amino acid analyses of wheat
-amylase purified from germinating seeds by affinity chromatography showed a high content of a modified lysyl residue. The modified residue was identified as N-
-trimethyl lysine. The presence of trimethyl lysine in
-amylase is discussed in terms of isozymes.
