Part of the Lysyl Residues in Wheat {alpha}-Amylase is Methylated as N-{varepsilon}-Trimethyl Lysine

Amino acid analyses of wheat {alpha}-amylase purified from germinating seeds by affinity chromatography showed a high content of a modified lysyl residue. The modified residue was identified as N-{varepsilon}-trimethyl lysine. The presence of trimethyl lysine in {alpha}-amylase is discussed in terms of isozymes.
