Mechanism of chilling injury in sweet potato XI. Irreversibility of physiological deterioration1

A mechanism affecting protein-lipid interaction in mitochondria is triggered in intact tissue of sweet potato roots by 2 day chilling-storage. Even after returning the once Chilled tissue to room temperature mitochondrial phospholipid is released, then the respiratory activity is decreased.
